In this week’s recipe edition, I’m sharing 2 quick and easy healthy recipes that I’ve been loving this past week. If you’re trying to eat healthier or lose weight, you’d love these fresh, filling and flavorful meals.
Veggie Delight Dalia
What you need :
– Dalia (broken wheat, boiled in water)
– Vegetables : Broccoli, capsicum, peas, carrots (or any mix of vegetables you have in the fridge)
– Boiled corn, kidney beans (rajma)
– Cumin (jeera), 1 tbsp Oil, Salt, Pepper, Lemon
Dalia is basically broken wheat and I often substitute rice with dalia in our meals as its quite healthy. For this recipe, boil and cook the dalia in plain water till its softened and cooked. Heat oil in a pan, add the cumin (jeera) and when the seeds are crackling, stir fry the veggies till they are half way cooked. The vegetables should retain their crunch and not get mushy for this recipe. Add salt and pepper to the vegetables cooking in the pan. Add in the cooked dalia and mix well with the vegetables. Taste and adjust salt/pepper. Cook for about 2 minutes and turn off the heat. Garnish with fresh lemon juice before serving!
Colorful Tangy Salad
What you need :
– Capsicum – Green, Yellow and Red
– Avocado (diced or mashed)
For the dressing : Balsamic Vinegar, Salt, Pepper, pinch of Sugar, Lemon Juice
This salad is super simple to make. Just chop up all the vegetables finely and toss them together with the ingredients of the dressing. Because of the Balsamic Vinegar and Lemon Juice, the salad has a very fresh, tangy flavor. You can also add some chilli flakes for some kick. The cucumber and capsicum add crunchiness, the tomatoes add juiciness and the avocado adds a creamy softness – the variety of textures in this salad makes it really exciting on the palate! A bowlful of this salad is quite filling and satiating as a dinner option when you’re trying to lose weight.
