Many of you had requested the recipe of this Sandwich when I’d posted this in my Breakfast Challenge. Here it goes~
For the filling :
Wash Spinach leaves thoroughly and chop them up.
Heat 1/2 tbsp oil in a pan and add cumin (jeera) to it. Next, add the washed chopped spinach leaves to the pan and saute till the leaves become tender and lose their water. Add crumbled paneer and boiled corn. Add salt and red chilli powder to taste. Saute for a few more minutes till all the excess water from the spinach evaporates.
For the sandwich :
Toast whole wheat bread slices on a flat pan (tawa) with a little bit of butter/ghee. Use the filling prepared previously between 2 slices of toasted bread and your sandwich is ready!
[note color=”#FFE4C4″]As you can see, the recipe is quite simple. I find spinach a little bitter by itself but adding paneer and corn to the spinach takes care of that. Spinach is excellent for hair. It is packed with nutrients – vitamins, anti-oxidants, omega 3 fatty acids, calcium and magnesium. It is also good for the bones, the eyes and the heart!
