The Weight Loss Diaries Vol. 19 : Spinach-Corn-Paneer Sandwich Recipe

Hey everyone!

Many of you had requested the recipe of this Sandwich when I’d posted this in my Breakfast Challenge. Here it goes~

Day 1-Spinach Corn Paneer Toast
Day 1-Spinach Corn Paneer Toast

For the filling :

Wash Spinach leaves thoroughly and chop them up.

Heat 1/2 tbsp oil in a pan and add cumin (jeera) to it. Next, add the washed chopped spinach leaves to the pan and saute till the leaves become tender and lose their water. Add crumbled paneer and boiled corn. Add salt and red chilli powder to taste. Saute for a few more minutes till all the excess water from the spinach evaporates.

For the sandwich :

Toast whole wheat bread slices on a flat pan (tawa) with a little bit of butter/ghee. Use the filling prepared previously between 2 slices of toasted bread and your sandwich is ready!

It is packed with nutrients – vitamins, anti-oxidants, omega 3 fatty acids, calcium and magnesium. It is also good for the bones, the eyes and the heart!

Hope you will enjoy this recipe as much as I do! You can add a bit of cheese to this sandwich if you like!

On another note, my exercise/diet routine isn’t going so well. I’ve been a little busy in the past 2 weeks and the routine just slipped away. Hoping on getting back on track over this weekend. How have you been doing? [/note]

  1. loved the recipe:) the pics look so tempting! i love spinach so will def try this out:) i have previously tried this kindof veggie combination for pasta and loved it:)

  2. You should get yourself one of those sandwich maker thingies..the electrical one or the even cheaper stove-top versions (I personally prefer those cos of frequent power cuts in Bangalore) since you do seem to like sandwiches/bread a lot! I cannnot manage without one 😀

I love these spinach-corn sandwiches, but have only had the supercheesy ones at Coffee Day/Barista…guess adding paneer would make these sort of similar tasting..
